Eggplant Non-Parmesan
Tonight I used up the rest of the eggplant from friday in Eggplant Non-Parmesan. I sliced it, breaded it, and fried it. I was going to bake it instead as a healthier option, but forgot to put it in the oven until it was too late so I fried it. We had that on spaghetti with sauce, the vegetable side dish was asparagus and cauliflower steamed and sauted. I planned on breadsticks as well but forgot to start the dough earlier enough in the day.
Mini Muffin loved the eggplant, so apparently she was just not in the mood to try something new on friday. She ate well and enjoyed her meal. So did Papa, so all was good.

I'm a ovo-lacto vegetarian. However, we refuse to eat certain things, like cheese with rennet. We do eat cheese without rennet, however. We also don't drink milk. We are exclusive soy milk drinkers.

All of your food looks yummy! Congrats on your beautiful baby girl! Hopefully one day I'll be able to cook that well for my (oneday) family.
