Muffin Meals

No, these meals won't be muffins but Muffin is one of my nicknames. Besides, it sounds cute! After viewing the Vegan Lunchbox site, religiously, my Husband wants me to post my own menu. I will try to post one meal each day. I hope I inspire people to have creative and healthy home cooked meals. I think that even if you aren't a vegetarian, you'll like the meals I present. I do feature dairy products and eggs in my food from time to time, but will try my best to present vegan dishes as well.

Supper last night

I didn't post supper for a couple of nights because we either all ate at different times or like last night, Mini Muffin was sick. But Thursday night we had stirfry and last night, baked potatoes. The baked potatoes was a pretty simple meal. My potatoes are HUGE, so I had to cut them in half or they'd take several hours to bake. I wrapped them in tin foil and baked them at 450 for 90 minutes. Then I sauteed onions (sometimes I add broccoli and mushrooms to the sauteed) and we topped our potatoes with chedder cheese, onions, ranch dressing and baco bits.

To veganize this meal you simply use salsa or a vegan salad dressing, and leave off the cheese. Toppings could include vegan vegemeat;: sauteed vegetables such as mushrooms, onions, broccoli, cauliflower, carrots, etc., vegan cheese, salad dressings or salsa.
