Muffin Meals

No, these meals won't be muffins but Muffin is one of my nicknames. Besides, it sounds cute! After viewing the Vegan Lunchbox site, religiously, my Husband wants me to post my own menu. I will try to post one meal each day. I hope I inspire people to have creative and healthy home cooked meals. I think that even if you aren't a vegetarian, you'll like the meals I present. I do feature dairy products and eggs in my food from time to time, but will try my best to present vegan dishes as well.

I'm Sick - A vegan solution!

Not bad sick, just a cold. I got it from the kids...wouldn't you know. So for supper we had soup. MMMM nice veggie soup! I didn't have all my veggies I usually use, but I did have: 1 onion, 1/2 stalk broccoli, 2 carrots, and a potato which I diced and sauteed together. I then added oregano, basil, garlic salt, and paprika. To that I added a chopped scallion and fresh off the cob corn, and a few strips of MorningStar Chik'n Strips diced up. When those were all mixed together I added an entire batch of soy milk, approximately 4 cups.

MMMMM Very good!

Now two little things about the MorningStar Chik'n Strips. Normally, I try not to buy too much vegemeat. Its not good for you, and its usually too expensive. However, my aunt and uncle and their daughter came for dinner one night and as my uncle isn't too keen on nonmeat foodies, especially those with lots of veggies, I decided to get them for him. They're pretty good! I also discovered a couple of weeks ago they are VEGAN! So now, even better! I still don't buy them much, and we don't use them as directed. I mainly dice them up, and so far they will last us 3 meals!! So, I suppose they can be a nice treat now and again. Ok, back to the soup!

As I was sick, I added a nice crushed clove of garlic to my bowl....MMMMM.

MiniB Muffin loved her soup, and ate a nice bowl of it heartily. I will be eating the last bowl of it for breakfast this morning, as I am still feeling a bit yucky. But that much soup and only a bowl was left over!! WOW!

Definitely a good thing, so next time you're not feeling well, try a nice bowl of veggie soup!
