Muffin Meals

No, these meals won't be muffins but Muffin is one of my nicknames. Besides, it sounds cute! After viewing the Vegan Lunchbox site, religiously, my Husband wants me to post my own menu. I will try to post one meal each day. I hope I inspire people to have creative and healthy home cooked meals. I think that even if you aren't a vegetarian, you'll like the meals I present. I do feature dairy products and eggs in my food from time to time, but will try my best to present vegan dishes as well.

Okra

I've had a number of people ask me, what the heck do you do with Okra. So I did a little research.

Wikipedia states that Okra "has the same mucilaginous properties as nopales [prickly pear cactus fruit]." This is a very nice way of saying, its slimy.

So, word of warning, if you can't handle slimy foods....don't try to eat this. If you aren't sure, only buy a few okra at first.

If you want to try okra, there are many ways to cook it. You can steam it, boil it, cook it in stew. You can cut it in small rounds and fry it, a favorite of ours is to bread it like eggplant parmesan and fry it that way. I also like to stir fry it with onions and Indian spices like curry or garam masala.

The best way to prepare it depends on how you will cook it. If you are going to leave it whole, just trim off any blackened ends and then cook as desired. Word of caution here, leaving it whole will give you more of the slimy properties.

If you are wanting small peices, cut off the very tip of the pod and the stem and then cut the remaining portion into rounds. Prepare and cook as desired.

I wanted to continue to post, however, when I rebuilt my computer I had to downsize my motherboard. I don't have enough USB ports and have to climb under the desk whenever I want to upload photos. Not an easy task.

I will try to get the photos I've done posted, and then I will be putting my blog on haitus until I am able to upgrade my computer. I apologize to everyone for having to do this. I've thought long and hard about this before I made my decision...but obviously, as this week showed me, I am not able to switch the cables as often as I should. I haven't posted since last week, even though I intended to.

During this next week I will hook up my camera and post the few pictures I have. And then I will leave my blog up, just won't update it. I will leave it up for archival purposes.

And we are BACK!!!

Yes, I'm finally back! My motherboard died and I had to build a new computer out of two. So now I'm running at a lower speed, but with more drive space. Go figure!

It took a bit to get back because I had to catch up on all the stuff I hadn't done while the computer was down. And now I can catch up on this!

Here is a meal we had while we were down. Later today I hope to post last nights meal!

Garbanzo vegetable curry over rice
Stirfried okra and onions.

I LOVE Okra, any way shape or form. However, I have to admit, this is one of the best ways. That and breaded. I took frozen Okra, because I couldn't find it fresh, and stirfried it with sliced onions. I added garlic salt, and a little Indian seasonings...and presto....perfect Okra.

Mini Muffin ate her Garbanzo beans and rice but wouldn't touch the Okra. However, Muffin Man ate it without a fuss....so HURRAY!!!!
