Muffin Meals

No, these meals won't be muffins but Muffin is one of my nicknames. Besides, it sounds cute! After viewing the Vegan Lunchbox site, religiously, my Husband wants me to post my own menu. I will try to post one meal each day. I hope I inspire people to have creative and healthy home cooked meals. I think that even if you aren't a vegetarian, you'll like the meals I present. I do feature dairy products and eggs in my food from time to time, but will try my best to present vegan dishes as well.

Tofu Sandwiches

We love eating Tofu Fish Fillets, but I didn't feel like having it again so soon, as we had eaten them twice in a week recently. So I satisfied my tofu craving by making tofu sandwiches. I breaded and fried the tofu, grilled some onions, and we had these sandwiches.

Very good tasting!!! MiniBerry Muffin even ate her whole half sandwich, and extra tomatoes.

Easy Lunch, yet oh so good!

Tomato Soup, quesedillas, and salad.

Can you get more American? My nephew came over for Friday night/Sabbath, and this is the lunch we all had. We all loved it. I put red peppers, cucumbers, tomatoes, kidney beans and a salad mix together. Baby spinach, and some other baby lettuces...not sure what. I normally don't buy the salad mixes, but it was given to me the day before by Corn Muffin.

The tomato soup had canned tomatoes, kidney beans, dried basil and italian seasonings in it.

My nephew reminded me I had forgotten to take a pic, so that's why there is cheese and salad dressing in the picture. I usually leave that stuff out so the vegans can enjoy looking at the food LOL!

MiniBerry Muffin's response to the food....SOUP!!! She loves soup, and salad, so this meal was a hit!

NEWS NEWS NEWS!!!!!!

The Muffin Family is going to have another Mini Muffin, in May! Hence the reason for Mini Muffin's name change to MiniBerry Muffin, she loves berries so much it just fit!

I am changing what I am doing with my blog, but only just a tad. I will try to mainly blog during the week, as the weekends are often so busy I can't take pictures and blog them. I will do my best to keep up with this blog, but being almost 7 months pregnant, I must ask for your patience...not that you all haven't had plenty already with our TOO LONG haitus! I will be researching new and yummy meals, but sometimes you may see repeats...I hope you all don't mind. Also, if I don't post for a couple of days, I will come back and post. Not only am I pregnant, but we are working on running our 2 businesses from our home office, and I get to do a lot of the calling, so at the end of the day, I just may be too TIRED!!!

I'm BACK!!!!!!!

Hurray! I got the card I needed to install on my computer to add more USB cables to it. Praise God, my very good friend was at the computer store when Muffin Man got there, as a customer, and when it came time to be helped, he was given what he asked for and was told they weren't charging him for it. WOW!

So, for lunch today we had sandwiches, nothing fancy. However, for MiniBerry Muffin (MBM), I used cookie cutters to make her sandwiches and vegetables cute. Why? Surely not because MBM won't eat her veggies....No. She loves her veggies. But she likes having her sandwiches look cute, so why not!!!

In our sandwiches today are Wham, that infamous vegetarian substitute, kosher cheese, cucumbers, lettuce, radishes and on Muffin Man's, onions. We discovered today that MBM LOVES radishes...so add that to the ever growing list!

Yes, we normally eat healthier bread, but this is potato bread, and oh so yummy!
