Muffin Meals

No, these meals won't be muffins but Muffin is one of my nicknames. Besides, it sounds cute! After viewing the Vegan Lunchbox site, religiously, my Husband wants me to post my own menu. I will try to post one meal each day. I hope I inspire people to have creative and healthy home cooked meals. I think that even if you aren't a vegetarian, you'll like the meals I present. I do feature dairy products and eggs in my food from time to time, but will try my best to present vegan dishes as well.

Flippity Flop!

Dinner was veggie quiche and asparagus. I added the last of the breadsticks from the other night. Also, my neice was here. She had already eaten however. I guess tonight was green! I chose this menu because I had one last pie crust in the freezer to use up. DH likes the stores for the quiche and my homemade stuff for pies!

Tonight was a flop! As you can see, the quiche didn't even want to come out of the pan properly. I don't really know what happened, but the milk didn't solidify, and the pie crust got soggy. DH didn't like the stringiness of frozen spinach leaves, I usually buy the chopped stuff. Sigh, so every once in a while, even I can mess up. On a good note, the asparagas was great and Mini Muffin even tried to eat some! Tomorrow is potluck at church, and I didn't have time today to make anything, but that's ok, because the church always has WAY too much food! But anyway, there won't be a picture tomorrow.

Bagel Melts....AGAIN!


Today Mini Muffin got to paint pictures, color (twice), practice stacking blocks, played with her toys, rode her ride on train, and practice her letters. She did a lot more as well! However, Mama and Papa were supposed to go to a meeting this evening....We didn't and DH went to a different one. So I decided a small on a simple standby that would use up yeasted foods! Not that any of the Muffin family MINDED eating one of our favorites! I put Tater Tots with it since I discovered that Tater Tots have wheat in them. Sigh....The things that they make with wheat that you would NEVER expect! But I digress!

Verdict: All was eaten and very much enjoyed.

Shells

I forgot to make a salad. LOL I made supper for a friend who just had a baby, she had cheese lasagna (they are not vegetarians and the men in the family hate vegetables, so this was a good compromise), breadsticks and salad. I made enough breadsticks for us, and giant stuffed shells, with herbed tofu, for us. However, I forgot to make two salads. So we had just breadsticks and stuffed shells.

The stuff in the little green dish is herbed olive oil for dipping the breadsticks in.

Verdict: These breadsticks were winners! Mini Muffin even stole one right off the table while they were cooling. Mind you, she's not even a year and a half yet! She ate most of one shell and most of a breadstick. And then topped it off with yogurt and applesauce mixed with her vitamins.

Pizza!

We all had a craving for pizza after sunday. Oh yah, Did I forget to mention I made about 8 Pizza crusts for my church? But we didn't stay to eat, so all of us have been craving Pizza. I looked in the freezer today and saw english muffins...tonights meal was born!

A side of fruit salad to use up some of the extra fruit in our house and yah, a semi healthy meal!

Toppings on the pizza were: mushrooms, onions, wham and smoked turkey (vege), and green peppers.

Verdict: Mini Muffin had a entire pizza, plus an adult size serving of fruit salad!! Her tummy was so full it was a drum!

Recap on Sabbath and Monday's dindin!

Saturday we did have company. A precious elderly lady and her grandson from church. Her grandson is about our age and the grandmother is from England, with a lovely accent and we just had a delightful time with them. Of course, I totally forgot to take a picture of my meal. SOOO, I will have to make it again soon. Besides, Passover is coming and I have to use up all the stuff in my house that is chamatz. So that means, in the next two weeks you'll see a lot of pastas and bread meals on here. I hate throwing stuff out, so I'll be redoing my menu to use up stuff.

Tonights meal was based on that idea. Using up what I have. So we had Thanksgiving in March! Bread dressing, mashed potatoes with McKay's Chicken-style gravy (vegetarian), Smoked Turkey by Worthington, and steamed broccoli!

Verdict: Mini Muffin ate her whole plate full and in her words "Numm Numm NUMMM!!" There is lots of bread dressing leftover, as usual, and we'll get to have that for lunch tomorrow (and maybe breakfast!)

Quiche!

As today was friday, I made supper for tonight and lunch for tomorrow. I'm hoping to have guests tomorrow so I made homemade shells and cheese, with mushrooms, onions, and broccoli, HUGE stuffed mushrooms, and I'll add a salad if I have guests. I wanted to make breadsticks, but my dough never rose.

Tonight we had veggie quiche and salad. The quiche had broccoli, mushrooms, and scallions in it and the salad had green leaf lettuce, scallions, mushrooms, and cauliflower.

Mini Muffin has been boycotting naps and not going to bed at night well recently, and today, she missed her nap. So she was tired, not very hungry, tired, and grumpy. Then I made the mistake of having our grape juice to open the Sabbath with on the table, and that made it worse. She wanted to guzzle the juice and not eat. SOOO, she didn't eat more than a few bites. However, the quice only had two slices left and one or two servings of salad were in the bowl at the end of dinner....

Last Night

Last night, I was tired. I fell asleep at about 8:30. BUT, my mom had surgery today, so she wanted to go out for one last hurrah before getting teeth work done. We went to a restaurant called Boppin Bo's. It’s a 50's style burger joint with great food and great malts! They even name their foods after people in the 50's. We had to decide on what to eat between things like a Bodacious Burger, or The Ricky Ricardo sandwich. I had a Psychedelic burger (garden burger), which is grilled mushrooms with Swiss cheese. DH had a Farmer's Daughter (garden burger), which is a healthy standard burger. My mom had The Lucy Sandwich, three types of cheeses melted together. She had them put a tomato in it as well, probably to pretend she was eating healthy. We also had blackberry and strawberry malted shakes and unlimited Fonzy fries. See what I mean about the names!

Mini Muffin was so overwhelmed with the posters and pictures and toys and things on the walls that she ate some fries, a slice of tomato and had apple juice and that was about it. She fed her eyes more than her tummy! But it was yummy!

I'm sorry I don't have a picture...Blogspot is being a pain. I will get pics up for this post and the next one asap.

Burgers!

Tonight we had Nature's Burger for supper, as well as herbed french fries. There isn't much to say, as its pretty clear on the photo.

Mini Muffin didn't really eat much....but that maybe because her meals got messed up today and she had a banana and some bagel about an hour before supper. She did eat a few tomatos and french fries with us however.

Black Beans and Rice



Tonight we had Black Beans and Rice, Cornbread, and asparagus. We were supposed to have Plantain...but we didn't. The reason the Cornbread was orange is because I experimented and put salsa in it. Although it was good, I don't think I'll be doing that again. The color was disconcerting! For dessert, FLAN!!

DH complained that I didn't put onions in the beans. But he seemed to like the meal anyway. Very little leftovers! Mini Muffin ate a ton! So yah, it was good!

Burritos


Nothing fancy, but that's ok. They were good! I made Beans Melvon again, and on the tortilla added cheese, lettuce, onions, olives and tomatos.

Verdict: Gotta tell a story on this one. Mini Muffin is learning to nod and shake her head for yes and no. She already is learning the signs for yes and no, but likes to nod and shake her head. She also, like most children, is very agreeable, in that she wants to please us. So, I wanted her to choose her burrito toppings, in an attempt to get her to want to eat more vegetables. Now, she is learning to like lettuce, and does NOT like olives, but strangely, keeps trying to eat them. So I began to ask her, do you want beans? BIG NOD! Do you want cheese? Little nod, not a cheese fan, wants to please me. Do you want tomatoes? BIG NOD! Do you want olives? Nod, then she notices what I'm holding and gives me a funny look. So I say, its ok if you don't. She then vigorously starts shaking her head no! I almost died laughing. So then I asked, do you want lettuce? Teeny nod. So I say, just a little? BIG NOD! She had, in the end, a burrito the size of mine, just a tad skinnier. And then ate half of it, and wanted more tomatoes. After the extra tomatoes, she was full. LOL it was a good supper!

Dry Corn Chowder

With a title like that, I bet you all are thinking, Wow, she finally messed a meal up big time! Well, um, no. Not quite! Sometimes I like corn chowder, and sometimes I don't want soup. So I made this up. I take potatos, frozen corn, and an onion, saute it together with herbs...and presto, the taste of corn chowder, no soup! Not there's anything wrong with soup, its just sometimes, you want to chew your food! We also had green beans as a additional vegetable.

Verdict: Mini Muffin took one look at her plate and said "Yumm Yumm". It was so cute. She loves potatoes, so she dug right in! Just as she was getting done eating, the neighbors came over to get their chairs we borrowed earlier. Mini Muffin's best friend took over the job of "feeding" Mini Muffin and managed to get a good amount of green beans and corn into her too! I guess it just takes the right movitavation to eat your veggies! DH said he enjoyed it and I know I did too!

Pasta Primavera

We have asparagus, so I am using it up! It was cheap this last week! Tonight was Pasta Primavera. Not the menu for tonight, but hey, I do what I can to not waste food! This whole weeks menu got messed up. Oh well!

I used soymilk and Tillamook cheese as the base for the sauce. I sauteed asparagus, carrots, cauliflower, red peppers, mushrooms, and garlic and then added the milk and cheese. MMMM. Grandma came over for dinner as well....She got stuck in traffic, came about an hr late, and arrived just in time to eat! You'd think she'd planned it or something! Normally I would have had breadsticks, or salad or something....but I was also busy making food for tomorrow, as its Shabbat! I figured, protein in the sauce, veggies, and carbs in the pasta...full meal!

Verdict: It's all gone...and I ate too much! Mini Muffin didn't really eat much...she had yogurt a couple of hours earlier, but she's not a fan of spaghetti without tomato-based spaghetti sauce. I added some tomato sauce to her food, but she still mainly just picked at it. Oh well, she is getting to that age! She ate well the rest of the day. Everyone else seemed to enjoy it. DH even gave me a thumbs up!

Bagel Melt

I had the presence of mind today at lunch, to take a picture of my infamous Bagel Melt sandwich. Good thing, as we ended up being out at supper time and just stopped to get a bite to eat at Special Thai. My Bagel Melt sandwich is pretty easy. A professor at college taught me how to make them...kinda had to since I worked in the College Deli at the cafe and if he wanted me to make it he had to teach me first! Basically you take a piece of vege lunchmeat and put onions, mushrooms, and olives on it. You then add a slice of cheese and melt the cheese on top. You toast the bagel, put cream cheese on one side, and mayo on the other. Top the cream cheese side with cucumbers and sprouts (or lettuce if you are fresh out of sprouts, like we were). Put the melted concoction on top, and close 'er up!

MMMM
Mini Muffin didn't have a Melt because her mouth is too little, so I made her a half of bagel and wham sandwich, with a side of cucumbers. She not only ate all of that, but also finished off a half of a pear and a half of an orange! The rest of the family happily ate their Melts and some fruit!

Pizza! At least its different, sorta!

Pizza, at least in our home, is a relatively healthy meal. Which is why we eat it so much. Very little cheese for all the bread and veggies on it! Tonight I made an herbed crust, with oregano, garlic, thyme, and rubbed rosemary. The veggies are zucchini, onion, mushrooms and broccoli. I used about 1 zucchini, one onion, 5 mushrooms and a crown of broccoli!

Verdict: This pizza was so good, DH and I just sat and ate in silence and bliss. Well, mostly silence, interrupted by yumms and MMMS. I am totally serious. I used to say that the best pizza I'd had was in Jerusalem. I can no longer say that! I have to do this again! Mini Muffin didn't eat much, just a few bites because she loves pizza as well. Why? Well DH went to take care of our friends fishtank at their restaurant, and found ick. While he came home to get the medicine for the fishtank, our friend set to work making Pad Thai with Yakisoba noodles for us. Mini Muffin had a lot of that as it was ready to eat before the pizza. So when us adults set to work on the pizza (after eating Thai Food), she wasn't hungry anymore. But she had to have her obligatory bites!

I CAN'T BELIEVE I FORGOT!

I forgot to take a picture. I'm including a pic of some of the meringues I made as compensation.

Here's what we ate tonight. We had vegetable bake. Potatoes, Carrots, and zucchini, thinly sliced and alternated in a pie dish. In the middle of that we had a head of garlic with the top sliced off. We each had one pie dish consisting of a half of a carrot, a half of a zucchini and a whole potato. And one whole head of roasted garlic.

MMMM. We sprinkled cheese on top and ate it. Mini Muffin didn't have any because I wasn't sure it would be done before her bedtime so she ate a different supper. She did, however, discovered that she likes roasted garlic on toast!

Ok, its been a weird day!

I didn't take a pic of supper. I kinda figured, after I realized I had forgotten, that most people know what tomato soup and grilled cheese look like. We had grilled cheese sandwiches on whole wheat bread, with tomato soup with kidney beans sprinkled with oregano and basil. Mini Muffin loved her soup, she even insisted on feeding herself. After it became too much work, I assisted with a second spoon. She ate her whole half of sandwich and a half cup of soup!

Today was rough, and yesterday was busy. But tomorrow is another day and another menu. Hurray for that!

Lasagna and Stuffed Mushrooms

Well, we did manage to get lunch. We didn't end up going to church because of DH's swollen eye, but the dr said it is probably allergies. So we'll see. I'm posting late bec I didn't really have much chance until now.

Ok, here we go...LUNCH!

Verdict: VERY GOOD! DH loved the stuffed mushrooms. Apparently it was the first time I'd made them for him. Mini Muffin wasn't so sure about the mushrooms but she heartily ate the lasagna. Lots of yummy leftovers. Guess what we had for supper after synagogue!

Mexican Food again!

Didn't I tell you all we like pizza? Well, we do. We even eat it with a mexican flair to it! Tonight, my first real night of cooking in a few days, I made Mexican Pizza's, the menu for LAST night! But as I said, last night we were commanded to go to our favorite restaurant.

Complimenting the pizza's was spanish rice and Beans Melvon. Beans Melvon is DH's recipe, named after him. Its a secret family recipe, but very good!

Also, we had company again tonight. Grandma! I love cooking when I have guests, I get to see how other people enjoy my food!

I also made lunch for tomorrow. But now I don't know how that will work as DH has a drs appointment tomorrow. Normally, just so those of you who are saying, "Drs appointment on the Shabbat?", its a semi-emergency thing and they didn't have an appointment for today. So, once again, health trumps all! Afterall, Christ (Yeshua) healed on the Shabbat too! Oh yeah, this paragraph was about lunch tomorrow. We should be having lasagna and stuffed mushrooms. We were supposed to have bread, but I forgot to get the dough ready in time, again. I will post a picture tomorrow.

The other thing I made today I don't have a picture for. At least not yet. Maybe sunday. I made meringues, two flavors, vanilla and chocolate. MMMMM.

Here's supper for today!Verdict: Grandma didn't eat much. She had appetizers with her beer, I mean rootbeer, with the girls today. But I think she liked what she had. Mini Muffin snarfed all her beans, and then some, and her rice. She ate about half of a pizza slice. Impressive, because she doesn't always eat mexi pizzas. All were full, including the dog, and there were leftovers!

Will I ever get to cook?!

I certainly hope so. Tomorrow I've informed DH that I will not be going out to run errands because I haven't stayed home at all this week and I insist on one or two days a week! Besides, I have to slice wham. What is wham? Well, its kinda like the smoked turkey I featured the other day. Only, pink and with a different taste.

Tonight, as I was getting all set to make Mexi Pizzas, the phone rings. Its my mom. Apparently, Special Thai had been trying to get in touch with me because they got some noodles in that I like! Yakisoba noodles to be precise. So we had to pack up the whole family again, moments after getting home, just to go out to eat. Oh poor us, had to eat at our favorite restaurant again!

But I took my camera!!! Here you go! Here are some of the things we ate. First the appetizers. Spring Rolls and Cream Cheese Puffs. Mini Muffin just LOVES Cheese Puffs.Next, two of the main dishes. DH favorite...Pineapple Fried Rice.
And lastly..... The Yakisoba noodles! Made into Pad Thai! MMMM.

Vegan Cookies!

Today we brought QT Pi, the family dog, home from the veterinarian. She is busy sleeping...However, running errands and getting her, plus a few other things made for a late lunch, leftover Olive Garden takeout, and hence, just a fend for yourself dinner. So, I felt really bad of the fact that I haven't been able to post a picture in the past couple of days. So, since DH has been BEGGING for "healthy cookies" as he calls them, I decided to give you a picture of them. Granted, its not a glamourous shot, but you can get a good idea. This recipe was given to me by a good friend. THANKS KIM!
I'll even post the recipe tonight!

Maple Walnut Cookies
Mix together:
2 1/2 c. chopped walnuts (I ground them up finer, so they resembled a coarse meal.)
2/3 c. ww pastry flour
1/3 c. carob chips
1/2 tsp salt
1/3 c. flaxseed
Add in:
1/2 c. + 2T Maple syrup
2 tsp. vanilla

Bake 350* on parchment paper for 10-15 min.

Restaurant food, and no camera.

Sorry folks. My day erupted into a bad mess. I didn't cook because I was at the veterinarians office most of the afternoon and evening, poor QT had surgery today. Anyway, we got take-out from the Olive Garden tonight, because of lack of time, and because I had gift cards for there! Thanks MOM!

Hopefully I will be able to cook what I have on the menu tomorrow!

Simple Sandwiches

Tonight, as I was too busy to go shopping, I noticed at supper that we have almost no food in the house. SOOO...nothing fancy tonight. We had sandwiches. And due to a lack of sandwich toppings (you COULD have a sandwich of condiments, but who would want to!) we used vegemeat, in this case Smoked Turkey flavored protein slices made by Worthington. Not the healthiest, but they are great on sandwiches, and with stuffing, and....well you get the idea. We buy them in the big huge logs and slice them down to our desired thickness.....much more cost effective! We also had Tillamook cheese, no rennet, lettuce, tomato and hummus!

Yep ladies and gentleman, I made hummus! For the first time in a long time. I made DH and Mini Muffin promise to eat it this time.

This was NOT a vegan meal, but it was vegetarian. I like using Tillamook, as stated before, since the cheeses we buy do not use traditional rennet. The Worthington Products often use milk or eggs, thus making them not vegan as well.

As this was Mini Muffin's first time eating hummus, I wasn't sure of what she'd think. Well folks, it was a winnner! She liked it so much she insisted on eating her sandwich with her own hands!!

Sabbath is a Happy Day!

And it sure is a busy one! (One of Mini Muffin's church songs says that "Sabbath is a happy day!"). We went to church this morning, and synagogue this evening! On the first sabbath of the month we have a potluck with the church, so here's a picture of the pasta salad I took with me. It has rotini pasta, with broccoli and cauliflower florets, shredded carrots, sliced scallions, diced red peppers, kidney beans and chickpeas. I tossed it with some italian dressing by mixing 1/3 C olive oil, 1 tsp each of parsley, oregano, and basil, 1/2 tsp salt and one clove garlic pressed.

Verdict: When the potluck was over, it was gone. Nuf said!

KFC = Kitchen Fri Chik'n

This is my version of a KFC meal. Homemade mashed potatoes, and fried Fri Chik. Fri Chik is made by Worthington Foods and is a chicken substitute. Not having eaten chicken since I was knee-high to a grasshopper, I will not even discuss whether it tastes anywhere NEAR what chicken tastes like, but its good! I sliced it up thin, floured it and fried it. I then took the juice stuff in the can and made it into a gravy for the potatoes. We also had broccoli and cauliflower as our vegetable.

This is one of my favorite meals. Its fun to cook AND eat! And our Mini Muffin loves FriChik, so that's was devoured, then some broccoli, and then some potatoes with gravy. There were no leftovers again this meal. HURRAY!

Thai Food!

We had Thai food tonight. I bet you all are wondering why there's no pic. Well, that's simple. We ended up going out to eat instead of me cooking. We maintain a fish tank at our local Thai food restaurant and happened to be there when my mom called. She discovered where we were, and came by! She even paid the bill!!!

Supper

Today I was sick, hence the late posting. We had supper, but DH cooked most of it. Vegan Gluten burgers w/ vegan gravy, au gratin potatos (betty crocker put cheese into them for us), and steamed brussel sprouts.

DH says that he didn't do most of it...so we'll say half and half. Either way, dinner was delicious and filling. So, with no further ado, here's a pic of dinner.
